Mozzarella Stuffed Peppadew.
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 teaspoon minced fresh oregano
- 1 teaspoon minced chives
- Pinch each salt and pepper
- 1/4 pound fresh mozzarella, cubed into 1/4 inch pieces
- 1 jar Peppadew or Cherry peppers (found in the grocery store near the olive jars)
- 6 slices Prosciutto, thinly sliced

Directions:
- In a medium bowl, combine the olive oil,
oregano, chives, salt and pepper. Mix well, add the mozzarella cubes and
toss to coat. Let marinate for 30 minutes.
- Slice prosciutto into approximately 4 by 1/4 inch strips.
To Assemble the Peppers:
- Preheat oven to 350 degrees F.
- Stuff
one cube of marinated mozzarella into each pepper. Wrap with a slice of
prosciutto (best accomplished by sealing the prosciutto on the under
side – stays secure). Place in baking dish. Bake peppers for about 10-12
minutes, just until the cheese melts and the Prosciutto gets crispy.
- Serve warm.
